TASTING NOTES
Ripe blackberry and cassis fruit along with bay leaf notes are heightened by subtle oak
and lifted spice characters. The palate unfolds in layers of intense blackberry, plum
fruits with savoury characters and with fine oak influence. Fine, varietal and persistent
tannins provide the framework for all these flavours. A wine with generosity on the

REGION
Dedicated Estate and select growers in the premium Central Victoria region provide the
ideal sites for the growing of generously structured, expressive Cabernet Sauvignon
fruit. Vineyards are planted to varying densities depending on the soil type, and are
trained to the standard vertical shoot positioning trellis to optimise flavour and tannin
development.

VINTAGE
Wet and relatively cool Spring season leading into Summer which was dry and warm
especially in January and February. With ample water available and well timed irrigation
of the vineyard, the harvest was excellent for disease pressure with fresh, clean
canopies and well balanced crop levels. Balanced wines with great fruit purity are the
hallmarks of this standout vintage. Overall, a vintage producing excellent varietal red
wines.

WINEMAKING
The Bend Cabernet Sauvignon fruit is picked at 13.2° baumé. Individual parcels were
crushed and fermented separately to preserve their unique characteristics. The grapes
were gently punched down by hand up to three times a day, with the focus on measured
tannin extraction to create a structural yet strongly expressive style. Once initial
fermentation was complete the wine was racked to stainless steel tanks to undergo
malolactic fermentation before being stored in seasoned oak barrels in order to ensure
the retention of the fresh varietal flavours and classic tannin structure.
