Pale lemon like colour with a glimmer of green around the edges. Intense passionfruit aromas jump out of the glass along with hints of lime, green apple and gooseberry. Reflective of the nose, concentrated flavours of passionfruit, green apple and lime engage the mouth subtlety underpinned by a crunchy acid tension and shades of fresh cut grass. Dry, crisp and invigorating with a long and persistent aftertaste.
The King Valley is one of Australia’s most exciting, emerging wine regions. It is located in North East Victoria – approximately three hours North of Melbourne and seven hours South of Sydney. Home to the most picturesque and unspoilt valley in Australia, King Valley benefits from a cool climate with extremely varied terrain, that ranges from snow-capped Alps to sun baked fields.
Wet and relatively cool Spring season leading into Summer which was dry and warm especially in January and February. With ample water available and well timed irrigation of the vineyard, the harvest was excellent for disease pressure with fresh, clean canopies and well balanced crop levels. Balanced wines with great fruit purity are the hallmarks of this standout vintage. Overall, a vintage producing excellent varietal white wines.
The fruit for the 2019 Sauvignon Blanc was picked on the 27th of February at 11.6° baumé. The grapes were picked in the cool early morning, pressed off skins into tank where it cold settled over 72 hours. Once settled in tank, the juice was racked for fermentation with some fluffy solids content. At a temperature of 14.0°C, the fermentation proceeded slowly over a period of 4 weeks. This allowed the retainment of fresh varietal aromas and flavours while providing crunchy acid tension and mouthfeel. The wine was left on yeast lees with weekly stirring to protect the freshness of the wine and adding further layers of textural complexity.
